The Challenge
Nutrition is at the heart of community well-being, yet many families in rural Bolívar struggle to provide balanced meals. Diets are dominated by starches and refined carbohydrates, while protein is often reserved for special occasions. Local superfoods like chocho, mashua, and cereal–legume pairings are disappearing from daily life, replaced by cheap processed foods that are marketed as modern and desirable.
At the same time, untreated water, poor hygiene, and high rates of teenage pregnancy make it harder for mothers to give their children the best start in life. Nearly half of young children in the region suffer from chronic malnutrition, leaving lasting impacts on growth, learning, and opportunity. The challenge is to revive traditional food knowledge, strengthen family nutrition, and create healthier foundations for the next generation.

The Solution
This internship offers a unique opportunity to work alongside local families, schools, and health professionals to strengthen everyday nutrition. Guided by experienced mentors, you will explore the realities of rural food culture and co-design practical solutions — from developing affordable family menus and recipe cards with traditional foods, to leading cooking demonstrations and hygiene workshops, or creating playful nutrition activities for children. Whether your background is in nutrition, culinary arts, education, or public health, there is space to contribute meaningfully while learning from the community.

You’ll engage deeply with local stakeholders to understand root challenges, co-create ideas, and test solutions that drive real impact. Imagine waking up to the cockerels at dawn as the sun rises over the horizon as you take in Chimborazo volcano over your morning coffee. After breakfast, walk down to meet your mentor, stopping to say hello to the friendly neighbours in the community as they take their cows to pasture.

Spend an hour to talk through your plans with your mentor, deepening your technical knowledge and finding out how to implement it within the local environment. Then take a trip into the colonial city of Guaranda to do some shopping and stop at a café to do some more research. Get back in time for lunch, which you spend with the rest of the team and workers from the local community, sharing stories and learning about the local culture.

Meet with your coordinator in the afternoon, to plan your pilot project or present your findings to the local community, before joining other interns and volunteers to go and watch the sunset, go out to a local bar/restaurant or simply spend the evening learning more from your host family.
